Cranberry White Chocolate Cookies

 

Cranberry White Chocolate Chip Pudding Cookies

These Cranberry White Chocolate Chip Pudding Cookies are chewy, sweet, and perfect for any time of year!

Ingredients

½ cup unsalted butter softened, 1 stick

¼ cup granulated sugar

¾ cup light brown sugar packed

3.4 ounces instant white chocolate pudding mix 1 box

2 large eggs

1 egg yolk

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup dried cranberries

1 ½ cup white chocolate chips

Instructions

1. Preheat oven to 350°F. Line a large baking sheet with parchment paper and set aside.

2.Cream butter and sugars together until smooth. Add pudding, eggs, additional egg yolk and vanilla. Beat for one minute on medium speed.

3.In a separate bowl, combine flour, baking soda, and salt. Add dry ingredients to the wet ingredients a ½ cup at a time and mix until combined.
4.Add cranberries and 1 cup of white chocolate chips to the dough and mix until combined.
5.Using a medium cookie scoop (1 ½ -2 tablespoons), drop cookies on the lined baking sheet about 2 inches apart. Cookies can also be rolled into balls by hand if a cookie scoop isn't on hand.
6. Bake for 11 to 13 minutes until cookie edges begin to brown. Remove from oven and allow to cool on the pan for a few minutes before transferring to a cooling rack and baking off the rest of the dough

Darla's Fabulous No Bake Cookies!

 These are incredible!  Boil for just 1-2 minutes and do her "soft ball" test.  (Have a cup of lukewarm water and drop dough in, if it sticks together - it's done!)  I wish I had taken a picture but I ate mine way too fast!!


2 cups sugar

¼ cup cocoa

1 stick butter

1 cup milk

1 cup peanut butter

3 cups of (small) oatmeal

1 tsp vanilla

Mom’s Chicken and Noodles

Mom pre-cooks her chicken by boiling it with celery, onion, salt and pepper and Patty’s seasoning (or use celery salt and/or chicken seasoning). And she also recommends halving the recipe and she uses chicken bullion paste and water, instead of the chicken stock. We also use Amish noodles. 
If needs thickening, use corn starch and water and call mom!
