Double Chocolate Gooey Butter Cakes

By Paul Dean

2 sticks melted butter, divided
1 (18.25 oz) pkg. chocolate cake mix
3 eggs, divided
1 (8 oz) pkg cream cheese, softened
3 to 4 Tbsp cocoa powder
1 (16 oz.) box powdered sugar
1 tsp vanilla
1 cup chopped nuts

Preheat oven to 350
Lightly grease a 13 x 9 inch pan

In large bowl combine the cake mix, 1 egg, and 1 stick of melted butter. Stir well. Pat mixture into prepared pan and set aside.

With a mixer, beat cream cheese until smooth. Add remaining 2 eggs and cocoa powder. Lower the speed of the mixer and add powdered sugar. Continue beating until ingredients are well mixed. Slowly add the remaining stick of melted butter and the vanilla, continuing to beat the mixture until smooth. Stir in nuts with a spatula. Spread filling over cake mixture in pan. Bake 38 minutes. Cake should be a little gooey in the center.
