For Christmas, Grandma Streeter always had tins under the Christmas tree of cookies! It was a big deal to us kids, because everyone - including us was given our own tin. There was always Mexican wedding cookies, seafoam candy, peanut brittle, petit fours and the most famous, the most coveted were her homemade chocolate short bread cookies with green strong mint frosting! These were the best!! And you had to hide them from my dad and brother or they would eat mine!
Chocolate Refrigerator Cookies
Eleanor Streeter
1 cup shortening
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1.5 t of vanilla or almond extra
Add:
2oz. unsweetened chocolate, melted and cooked
Gradually add: 2 3/4 cup flour
1 t salt
1/2 t soda
1/2 cup chopped nuts
Form 2 logs, wrap and put into fridge overnight. Slice 1/4" think, bake in un-greased sheet at 375 for 6-8 min.
Frost with:
2 cups powdered sugar
1/2 t peppermint oil
2 T melted butter
3 T. hot milk
and green food coloring.
