Carol's Peanut Butter Balls

Christmas is not Christmas without these peanut butter balls. My best friend's mom is a fabulous baker and this is her number one recipe in my book. (Look for her chocolate chip recipe here in a couple of weeks - those are so good I asked for them INSTEAD of wedding cake!)

These peanut butter balls are a bit time consuming but I promise they are worth it.

Peanut Butter Balls
Carol Goudzwaard

2 cups cream peanut butter
1 stick butter, softened
1 tsp vanilla
1 lb powdered sugar

1/2 bar paraffin wax
1 pkg. chocolate chips

Combine the first 4 ingredients and roll into balls. Refrigerate one hour.

Melt wax and chips in a double broiler. Dip balls with a tooth pick into chocolate and set on wax paper to dry. Once all covered, use toothpick to dab melted chocolate into the holes of the balls. This makes them look pretty and without eye balls. In Michigan we are lucky enough to store these in the garage to keep them cool. But they never last very long. These are the reason I gain weight every Christmas!
