Mom's Pumpkin Bars

This is another classic in our household in the fall.

Mom’s Pumpkin Bars

4 eggs
2 t, baking powder
1 2/3 C sugar
1 t. baking soda
1 c Vegetable oil
1 t. salt
2 c. cooked pumpkin (16 oz. can)
2 t ground cinnamon
2 c. flour
1 In mixing bowl, beat together eggs, sugar, oil and pumpkin until light and fluffy.
2. Stir together flour, baking powder, baking soda, salt and cinnamon..
3. Add dry ingredients to pumpkin mixture and mix thoroughly.
4. Spread batter in ungreased 15 1/2 X 10 1/2 jelly roll pan.
5. Bake in preheated 350 degree oven for 25-30 minutes.
6. Cool. Frost with Cream Cheese Frosting . Cut into squares.

Cream Cheese Frosting

1 c. butter or margarine, softened
1 8 oz. brick of cream cheese
2 t. vanilla
4 c. confectioners' sugar (a little more if the consistency isn't right)

1. Cream together butter and cream cheese. Stir in vanilla.
2. Add confectioners' sugar, a little at a time, beating well, till blended.
3. Frost bars.
4. Eat and enjoy!
