My mom rarely uses a recipe. At least not on her good old fashioned classic recipes. This is one of my favorites that she makes. Mom's comfort food - it doesn't get much better. However, I cannot get an exact recipe from her as she just "throws" things in as needed. This was as close as I can get to an actual recipe.
Chicken leg quarters with skin
1/4 cup chopped onion
1/4 cup diced celery
salt and pepper
chicken bullion
egg noodles
Cook chicken with celery and onions in just enough water to cover the chicken. Add salt and pepper to taste. Once it starts to boil, turn the burner down low. Once thoroughly cooked take chicken out of pan and let cool. Once cool, remove skin and bones. Dice the meat and add back to liquid. Bring to a boil. Add noodles to mixture and cook until tender. You can add chicken bullion if needed for taste. If it is too juicy, you can always add a little instant mashed potato flakes, a little at a time to thicken up.
For chicken and rice: Same recipe but use rice instead of the noodles. It is just a matter of trial and error.
Mom sometimes adds a can of drained mushrooms. I love mushrooms but not in my chicken and noodles.
