Oatmeal Raisin Cookies

My husband loves oatmeal raisin cookies while I have never been a fan. I am a chocolate girl. I found this recipe on recipezaar.com and I love them! And the kids do too. Everyone is happy when I make these.

Whisk together and set aside:

2 coups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
(Optional: I also like to add 1 tsp cinnamon)

Cream wet ingredients

1 cup butter, softened
1 cup sugar
1 cup dark brown sugar
2 large eggs
2 tsps vanilla

Then stir in:
3 cups oats (not instant)
1 1/2 cups raisins

Preheat oven to 350
Whisk dry ingredients
Combine wet ingredients with a hand mixer until fluffy and lighter in color
Stir in flour mixture until flour is no longer visible (over mixing will cause a tough cookie!)
Now stir in raisins and oats

Bake cookies for 11-13 minutes until golden, but still moist beneath the cracks on top.
Makes 36 cookies

* I have also made these with cranberries instead of raisins and added in some white chocolate chips!
